The oleic acid is a carboxylic acid very diffused in nature, in the vegetable and animal fats like glyceride. it is an oily liquid colourless and insoluble in water. It is used in several industries: textile, of detergents, of lubricants, etc.

The oleic acid is a fat acid not saturated, which it is found in nature esterified with glycerol, to form the glyceride known as olein. It is the principal constituent of all the oils not drying as olive oil.
